With the kids heading off to college, our soldiers all around the world, and lunchboxes to fill, here are cookie recipes that will ship well and hold up well in lunchboxes.÷  Whether you want to send cookies to your child in Afghanistan, Iraq, or around the corner to their local school, these cookies should work for you.÷  Try these Peanut Butter Buddies or Apple Raisin Nut Cookies the next time you need to send cookies. PEANUT BUTTER BUDDIES 1 cup creamy peanut butter 1 cup butter, softened 1 cup firmly packed brown sugar 2/3 cup light corn syrup 2 eggs 4 cups all-purpose flour, divided 1 tbsp baking powder 1 tsp cinnamon 1/4 tsp salt In a large mixing bowl, with mixer at high speed, beat peanut butter, butter, brown sugar, corn syrup, and eggs until smooth. Reduce speed and beat in 2 cups flour, baking powder, cinnamon, and salt. With a wooden spoon, stir in the remaining flour. Wrap the dough and chill for 2 hours. On a floured surface, roll out half the dough to 1/8-inch thickness. Cut with floured cookie cutters, shapes of your choice. Bake on ungreased cookie sheets at 325 degrees for 10 minutes or until cookies are lightly browned. Cool on wire racks. Decorate if desired. Yield: About 2 1/2 dozen cookies. APPLE RAISIN NUT COOKIES 2 cups flour 1 tsp baking soda 1/4 cup milk 1 egg 1/2 cup shortening 1/2 tsp salt 1/2 tsp cinnamon 1/2 tsp nutmeg 1 cup brown sugar 1 cup raisins 1 1/2 cups chopped apples 1 cup chopped pecans or walnuts Preheat oven to 400 degrees. In a large mixing bowl, sift together flour and baking soda; set aside. Put milk, egg, shortening, salt, cinnamon, nutmeg, and brown sugar into a blender. Blend until smooth. Remove mixture from the blender and add to the flour mixture. Mix well. Add the raisins, apples, and nuts to the mixture; blend well. Drop by teaspoonfuls onto a greased cookie sheet. Box at 400 degrees for 10 to 12 minutes or until lightly browned. Note:÷  As when shipping any food items, package well and ship to arrive timely. Enjoy!
