Sweet and Spicy Chicken

Sweet Spicy Popcorn Chicken   Try this just once and your family and friends will ask for it again and again. To start you will need these ingredients:   *1 3-5 lb. bag of breaded chicken nuggets (if you prefer you can make them from scratch but the pre-breaded ones are very good for this dish and easier as well) *a 16 ounce bottle of apple juice or apple cider *2 cups of dark brown sugar *1/4 cup molasses *1/2 teaspoon ginger *4 tablespoons Texas Pete cayenne pepper sauce *parchment paper   The Chicken   Fry or bake the chicken. If you want less fat  then bake the chicken  covered with foil in a 350  degree oven for 20-25 minutes or until it reaches internal temperature of 165 degrees Farenheit.  Keeping it covered will ensure that it is moist for the second step in preparation. If frying the cook in batches for 4-7 minutes (again until 165F) and hold covered for step 2.   The Sauce   To make this really delicious sauce first  pour the apple juice into a sauce  pan or stock pot that is large enough to hold the sauce and some of the chicken as well. Add the brown sugar , ginger and molasses. Stir with a whisk until the sugar is thoroughly dissolved. Add the pepper sauce and bring to a boil. Reduce heat to medium and cook until reduced by about 1/3.  Now put the pre-done chicken in and stir until evenly coated. Place chicken on parchment papered sheet pans and bake at 400 degrees Farenheit for 8-10 minutes, then you are ready to serve.   Serving Suggestions:   The best way I have found to do this is to place the chicken on a large serving platter with small crocks of Ranch and Bleu Cheese dressing in the center. It also is complemented well by a platter of crudites and cheeses.
